This was a succulent recipe! I did make some changes to the original, however. I used canned enchilada sauce and Mexican cheese (instead of the cheddar.) Too, I layered the corn tortillas, rather than gyre each one. I decided to practice this because the tortillas kept nifty. This was a wonderful dish that I volition make again and again!

Wow! Delish! These enchiladas scored a touchdown on my Super Basin Sunday Buffet table! I left out 1 tin of chilis and used Sara's Ruddy Enchilada Sauce from this site in place of lycopersicon esculentum sauce. Heat the tortillas in a non-stick pan for a half minute or and then, this will make them pliable without the oil or sauce on them. I also served the sour cream on the side for garnish rather than in with the sauce. Cheers Sara.
06/27/2002
Succulent! I used flour tortillas, and these enchiladas turned out great . I must admit they take awhile to prepare, and alot of steps are involved but tehy are well worth the work. My boyfriend loved them. It'due south the get-go dish he'south requested that I brand over & over once again.
02/07/2003
A good basic enchilda recipe. I modified mine slightly due to what ingredients I had on mitt. I used canned enchilada sause instead of the tomato/chili powder combo. I also used ground beef. I imagine it would exist fine either manner.
05/26/2003
I have made this recipe three times. Every time it get's rave reviews from the other pepole who get to accept some. My only proposition's is that you use alot more cheese, and brand alot of them...they are dandy left-over meal'south
07/08/2003
Very good enchiladas! I used "Blood-red Enchilada Sauce" submitted by Sara instead of the tomato sauce, more cheese, flour tortillas (nosotros like them better than the corn ones), and only ane can of green chiles. I served over a bed of shredded lettuce and used the sour cream every bit a garnish instead of putting it in the dish. Next fourth dimension, I might add some bell peppers. I could see ground beef working equally as good. Thanks Sara!
04/xix/2009
Simply AWESOME! I cooked my beef in a crockpot then that it would be squeamish and tender and piece of cake to shred. I added all the ingredients to the crock pot: sauted onions, garlic, peppers, tomato sauce, chili powder. I besides added enchilada seasoning, enchilada sauce, and 1/4 cup of chicken stock. Cooked in crockpot for 5 hours on high. I didn't accept black olives, simply did add together refried beans to my tortilla rolls. This came out wonderful and was full of flavour. My family unit loved information technology!
10/03/2002
Easy recipe to follow. Tasted great. I did not apply lycopersicon esculentum sauce rather I used Brenda's recipe for red enchilada sauce instead. Cheers for the recipe!!
03/03/2002
This dish turned out actually well. I forgot to divide the lycopersicon esculentum sauce, and so I didn't take any left to pour over the top, simply it still turned out OK. I recall it would accept had more than wet if I had washed it right, though! I think I will utilize ground beefiness instead of sirloin steak adjacent time I make this recipe.
11/08/2006
I've made this recipe iii times now and each time i did it differently trying to make it ameliorate. This is what yous do: Utilise steak-ums instead of beef. Don't put lycopersicon esculentum sauce on peak. I used flour tortillas. Who likes cooked sour cream? eww. Basically, follow the recipe for the meat and and then roll upward in flour tortillas. Then merely put cheese on top (i used monterey jack/colby) and bake. Then on each person's serving, add sour foam, chopped green onions, chi chi's salsa... This tastes actually practiced!
11/28/2002
Very easy recipe to make with very practiced season!
05/15/2009
These were then good! I served them for visitor and 2 people told me that it was the best mexican repast that they had ever had. Served it with the Spanish Rice Two recipe from this site, refried beans and guacamole. I did utilize ii cups tomato sauce and two cups canned enchilada sauce rather than four cups tomato sauce. Would definately practise that again. Thanks for a really good recipe!
07/08/2003
Very good enchiladas! I used "Reddish Enchilada Sauce" submitted by Sara instead of the tomato sauce, more cheese, flour tortillas (we like them amend than the corn ones), and only i can of green chiles. I served over a bed of shredded lettuce and used the sour cream as a garnish instead of putting it in the dish. Next time, I might add some bell peppers. I could run across basis beef working equally as good. Thanks Sara!
01/19/2009
I increased the servings to 8, and they were wonderful. The topping is creamy and cheesy. I used some other proffer and used red enchilada sauce instead of the packet of taco mix. Also, I microwaved the corn tortillas (5 at a time between paper towels) for 20 seconds...they were pliable and rolled hands. Excellent!
09/18/2011
Did a piffling irresolute after reading reviews. I seasoned my sirloin with blackened seasoning and grilled it, and then sliced it THIN and added taco seasoning and cumin. And so Added some salsa, a tin of green enchilada sauce, onion chips (because I grilled meat and did not cook in pan) and some chilis.I combined that with some cheese in FLOUR tortillas and topped it off with canned red enchilada sauce and cheese. Information technology ROCKED THE Business firm. I should probably submit as separate recipe since I really did my own affair...lol Merely the steak made it really special. I did get a lot of rave comments.
02/17/2003
Very delicious but the sauce was bit too strong for me. Still a wonderful meal!
03/02/2010
WOW!!! These enchilada'southward were the all-time! I made them for a dinner party, and anybody LOVED them! I didn't change a thing! My next batch, I might make them a bit "hotter" past calculation fresh jalapeno! EXCELLENT!!!!
07/29/2009
I fabricated these with ground beef and ommited the salsa and sour cream. I also used a pre-fabricated red enchilada sauce too equally a pre-made greenish enchilada sauce which added great flavor. My boyfriend loved them! They fabricated great leftovers likewise! Thanks!
eleven/06/2003
Good! I used Boca crumbles instead of steak; scratched the chile peppers and lycopersicon esculentum sauce; used 1 can enchilada sauce and one jar salsa; used flour tortillas. To prevent tortillas from getting gummy Practice NOT put any sauce on the lesser of the pan.
07/09/2010
This could be an fantabulous recipe. I'm not sure if it was the brand I bought or what, simply my corn tortillas just fell autonomously during blistering and it turned out to be more of an enchilada mush. Still, side by side time I'd use flour tortillas and I think nosotros'd exist ok. The flavors are all in that location, but for some reason it all got lost in the mushy tortillas.
05/xiv/2013
Ive cooked this recipe twice at present, once past the volume which was practiced but I felt the prep fourth dimension took to long. The 2nd time I changed a couple things. First get rid of the salsa....the recipe already has tomato sauce and chili peppers. The salsa is unnecessary so save your fourth dimension and coin. I also seasoned the beefiness, onions, and garlic while they sauteed. Thirdly dont waste your fourth dimension rolling each private enchilada (also messy and fourth dimension consuming) Just layer the casserole like lasagna. Meat mix, tortilla, cheese green onion olives, tortilla, meat mix, tortilla, sourcream, cheese green onion olives. Cover with foil and bake for 30min, remove foil and broil for 3-four min till cheese has that squeamish caramelized bubble.
02/04/2013
I stock-still this recipe for the super bowl and information technology was great. But my one problem with it was it took iii hours of prep time instead of the stated 15 minutes, and the cook time was 1 hour unstead of the xxx minutes. The four cups of tomatoe sauce also made information technology a niggling soggy, the 2 teaspoons made it a little to spicy. The next time I cook this I will alter some of the ingredients and let you know how it turns out.
06/20/2009
try information technology, its the best....i made more than layers than just one, due to the fact i had leftover tortillas....it made it super hearty and delicious- most like an enchilada lasagna!
12/30/2000
Delicious- used Ruby-red Enchilada Sauce instead of the 2nd half of the lycopersicon esculentum sauce called for in the recipe.
06/16/2011
I used flour b/c of previous comments, I used 1 ane/2 c of onions, scattering of chopped cilantro and some black beans. I agree w/ previous comment near liquid, next time I will use 1 cup of tomato plant sauce divided and two cups salsa divided....mayhap fifty-fifty just salsa. We as well didn't practise chili's (kids not fans) and only topped it due west/ olives (kids non fans). It was good, but I call up information technology was b/c of the addition of the cilantro and salsa, otherwise I think it wouldve been a bit bland
02/19/2011
Chris.s favorite-fry the tortillas and use taco sauce instead of lycopersicon esculentum sauce
08/24/2004
Oh my! These were succulent. I confess, I used ground beef and tweaked a few small things, simply none of my changes were significant. My one-time enchilada recipe is going in the trash.
05/02/2003
This is terrific. It was inhaled past my family.
07/10/2003
My husband, who by the way has never ordered anything but chicken fajitas in a mexican resturant, absolutely loved this, I have added it to my recipe box and will get in again and agian!!!! Thanks so much for sharing this yummy recipe with us!!!
11/16/2008
Great recipe. I did make a few changes, used hamburger vs. steak and put a chip more onion and garlic in that recipe chosen for. They were YUMMY! I'll apply this recipe over and over again.
ten/18/2002
Authentic Mexican Flavor -- only non very appealing to look at, and information technology takes a while to prepare.
03/26/2010
For my 1st Enchiladas, I must say information technology was pretty darn good. I used the "Red Enchiladas Sauce" recipe instead and it turned out skillful. Yes I twirked information technology a little, merely non too much.
05/07/2007
This recipe was good. Information technology is non the best enchilada recipe I have ever had just I will definitely make information technology again. If you want authentic mexican enchiladas, these are not for yous. In that location is a lack of spice I am guessing from not using enchilada sauce. These take a sweeter taste to them due to the tomato sauce. The only matter I changed was I used shredded beef instead of the recommended meat. These are great reheated. I will add more cheese on height next time. I love sour cream then I used it as recommended and had no issue with it. Oh and I had an obscene amount of beefiness left over. It couldn't all fit in the corn tortillas. I would definitely not recommend flour tortillas equally some have mentioned. They will soak up too much of the moisture.
05/20/2010
Given that i used turkey instead of beef, i think they turned out very well. Nevertheless, i thought information technology lacked a little flavor. Next time I will add some fresh cilantro to the meat mixture and garnish them with it as well.
09/20/2010
Practiced season only way too much liquid. I fifty-fifty left out a full cup and a half of tomato plant sauce and it was all the same to runny. Will endeavour some other recipe for my next enchiladas.
x/11/2009
i used this as a base recipe i do that alot when i know how something should be made simply im not sure about the steps. i used ground beef and served them with a great guilt free ranch dip from this site.
06/23/2002
I sauteed leftover new york strip steaks for the filling, chopped upwards into bite-size pieces. I also made homemade salsa (didn't have any on hand) which made the recipe more than time consuming only probably added a lot, flavorwise. I suggest heating some additional lycopersicon esculentum sauce and sour foam and using that to help soften the tortillas - otherwise, they practise pause when you try to curl them up.
10/28/2009
Okay, I tin already tell this will be a family favorite. I would notwithstanding substitute enchilada sauce for the tomato.
07/13/2009
First-class enchiladas! A bit spicy if you lot utilise too many cans of the green chile peppers. I used basis meat and flour tortillas simply other than that I followed the recipe.
12/28/2010
pretty good but have had better
10/20/2004
OK just for best results fry the tortillas lightly in hot oil for about a second on each side to make them softer, then dip the tortillas into the warm sauce and pour remaining sauce on top, employ authentic mexican cheese instead (cotija or queso quesadilla)
08/27/2001
WE thought this was a actually tasty recipe, thanks Sara. I did substitute my home mixed seasoning mix instead of the chili pulverization. ( three T chili powder, 2 T ground cumin, 1 T ground black pepper, i T garlic powder and 1-1/2 t. ground red pepper mixed together) I keep this in a spice jar as a substitute for chili pulverisation and I think that added some spice to an already good recipe.
08/04/2003
Very proficient flavor! It took a lot more prep time than I expected. The meat was likewise rather tough and chewy. I think the next time I make these, I will throw the sauce ingredients and a chuck roast in my slow cooker and shred the beef when information technology's nice and tender. Simply I will definitely be making it once again!
08/09/2001
I have a 5 and a 2 year old and my husband is in the armed forces. While he was in the field I made this for the kids and I and I didn't remember my 2 yr old would always stop eating! We all know how picky young kids can be. I give this ***** and volition definitly get in once again!
03/20/2002
Seemed similar a LOT of tomato plant sauce, and I couldn't find the canned green chilis, then I used two 7-oz. cans of green chili/tomatillo sauce instead and added merely a niggling of the tomato sauce (maybe a few tablespoons) in the filling. Used ground beef instead of steak. Dipped the corn tortillas in the filling mixture before stuffing to brand them easier to whorl. They were delicious! The dark-green chili sauce gave it a LOT of season—and they were not too spicy for my 3 year former.
12/17/2009
I made this using this recipe equally my "springboard". We don't treat black olives so I elimated those and used ground beef instead of steak. I also used canned enchilada sauce instead of lycopersicon esculentum. I kept the chiles and for seasoning, I added a packet of powdered enchilada sauce.. it was marvelous! Thanks once more for the thought!
08/24/2006
Only wonderful! I used lean ground beef instead of the steak and added taco seasoning to it. I as well used enchilada sauce from a tin instead of tomato sauce. The only other change I fabricated was I sprinkled the olives on height instead with the cheese. Like shooting fish in a barrel, and delicious! They were even ameliorate the next mean solar day! I volition look no farther for a not bad enchilada recipe! This ane rocks!
ten/07/2001
The iv cans of tomato sauce is a little too tomato tasting. If I ever try this one again I will have the suggestion of some other reviewer and substitute 2 cans (or maybe all cans?)of tomato plant sauce for scarlet enchilada sauce. Also, the meat mixture was a fleck bland. We added extra chili powder, and lots of common salt & pepper. I think this is a adept recipe to brand for kids considering the flavors are very unproblematic. I will keep trying to find the perfect enchilada recipe.
02/xv/2002
Delicious...I fabricated these enchiladas for a friend'south birthday and he really loved them, and he is usually pretty indifferent about food. I am vegetarian, so I substituted meatless burger-style crumbles for the steak. I also used bootleg enchilada sauce instead of tomato plant paste, which gave them an extra kick. It's a great recipe! Thanks!
03/01/2010
this is a proficient bones enchilada recepie, I fabricated information technology with fresh corn tortillas.
07/12/2003
These were peachy...the only thing I did differently was used flour tortillas instead of corn tortillas. This is a keeper. Thanks for posting.
09/12/2008
I, also, used ground beefiness and enchilada sauce instead of the sirloin steak and lycopersicon esculentum sauce. These taste great! They do non accept any longer to put together than whatever other enchilada recipe. I will continue this every bit my favorite Beefiness Enchilada recipe!
07/31/2008
This was a very tasty dish. I made a casserole instead of the rolled enchiladas equally my tortillas wouldn't hold up. I likewise added a bit of cumin and salt to the tomato sauce. Will definitely make again.
01/27/2010
5 stars I say because it'southward the perfect enchilada recipe Base of operations at least. I would get past this recipe every fourth dimension, but I add greenish and blood-red bong peppers, more chili pulverisation (giving great season), maybe a little ground cumin, add garlic pulverisation, and I use flour tortillas because I dislike corn ones. ...next time I might try marinating the beef (in chili powder, garlic, and beef goop (with red vino peradventure)..?) first because I don't like that "beefy" gustatory modality. Oh likewise I didn't employ olives, and I don't really think they vest in real mexican enchiladas, but each to their ain! ;)
12/10/2005
Yummy recipe! Fun also, I liked filling the enchiladas. I substituted flour tortillas for corn tortillas and canned jalapeno peppers instead of chile peppers.
08/06/2003
This is now one of my favorite recipes. It had a lot more flavor than well-nigh dishes and tasted like something from a restaurant. The only things I did differently were to leave out the olives (don't like them) and to use rotel instead of the green chiles (didn't have any chiles). They were very good, but filling, and then I didn't go to eat every bit many as I would have liked to
04/14/2005
This was pretty good. I used some habitation fabricated enchilada sauce in place of one-half the lycopersicon esculentum sauce mixture.
09/22/2001
I thought the meal was actually practiced-but got confused on the tomato sauce (only use half at a time). It would probably be amend with ground beef considering the steak didn't seem to make full the tortillas very well, a little runny! Also, tried the corn tortillas and they kept falling apart, had to utilize flour - also added a little cumin!
11/11/2007
that was wonderful my entire family unit loved information technology and want it to exist a regular at our reunions, thanks for a smashing dish.
03/15/2008
These were pretty good. I did add some spices though and thought it probably would accept been pretty bland without them. Did not put the sour foam in prior to baking, but did put some on elevation before serving.
03/15/2009
I made this for a bithday dinner and anybody raved nearly information technology.
06/19/2002
Nosotros tried this one and it was a hit all the style around. Best of all, it didn't take much time to become it ready. We will brand this ane again.
02/19/2006
I cut the recipe in one-half, it worked out to nearly viii tortillas in a 7x11 pan. Used circular steak, mixed 1 cup of hot enchilada sauce with 1 loving cup of tomato sauce. didn't use the salsa, it was saucy enough without information technology. Less sauce would yet be skilful. Served the sour cream on the side.
08/23/2001
Excellent!! I used ground beef and left out the olives and it was still great.
05/06/2008
Awesome. A new favorite in my firm!
07/01/2013
ok. quick and easy. adept for when y'all have cheap steak you lot need to get rid of.
05/24/2005
This was a corking recipe. The enchilada's had and then much flavor and it was and then piece of cake!
01/05/2010
I besides layered flour tortillas instead of corn tortillas like in another review..i also used can of enchilada sauce, and I seasoned my beef with a taco seasoning parcel, which gave it a great flavor..when i was layering it like a casserole i crunch up some absurd ranch doritos for a little extra flavor which was really good..family all said it was very practiced..will make again for sure..
10/28/2009
I make enchiladas many means and this looked interesting. I used the nutrient processor to ground the sirloin to a chunky texture. All went well until I attempted to fold/wrap the enchiladas with the corn tortilla'south. They cracked and fell apart before I even baked them. I would fry the tortillas before filling IF I make this over again. Likewise, employ enchilada sauce!!!! Did not employ sour foam or green onion. I felt the onion in the enchiladas were enough.....
07/29/2003
the fifteen minute prep time is short. it took more than like 30 minutes. i found the finish result to be boilerplate because the work i put into it.
07/13/2004
This was sooo proficient! It has to go with rice on the side we decided side by side fourth dimension. It was really piece of cake to brand and to enjoy.
xi/01/2009
This is really good. Next time I'll use McCormick, in the little parcel, enchilada sauce. It's a better flavor then a can.
eleven/16/2001
My family unit really liked this recipe. I substitued ground chuck for the sirloin, and information technology turned out bang-up!
07/01/2003
SARA DOESNT SAY WHAT TEMP.TO SET OVEN???? Only PREHEAT.OTHER THEN THAT THEY WERE Expert!
08/27/2008
This was an ok recipe. Information technology seemed to be missing something. A spice, an ingredient, I'thousand not certain what exactly. It was good, but I'm not sure I'll get in over again. I put too much sauce over the acme of the enchiladas.
04/xvi/2008
This was awesome. I used ground chicken instead of beefiness and I don't think it could have been better. I too spreaded some black beans and rice in the wraps with the chicken. We had left overs and they didn't terminal long! That says a lot in my house!
04/twenty/2007
Very good! I used enchalada sauce instead of tomato plant sauce to give information technology more of a kicking. Yummy!
xi/15/2006
An excellent recipe, and very flexible for changes. I used ground beef instead of steak, which is my personal preference for this kind of dish. I left out the green onion because I didn't accept whatever on manus. Finally, I used Hunt's tomato plant sauce--which I found in another enchilada recipe--and information technology was the bomb. The meat mixture was superb, something that could be used for many other recipes. Making information technology with Hunt'south sauce does make information technology seem more than similar an Italian dish than Mexican. I look forward to trying enchilada sauce side by side fourth dimension, every bit other reviewers take suggested. Practise note: Corn tortillas break easily, especially if they are small or overfilled. Because the ingredients in this recipe mesh together, this comes out like an enchilada casserole, which is fine. It was wonderful.
02/06/2010
Delicious!
03/21/2008
I followed some of the advice from a few of the reviewers. The corn tortillas were a pain to use and then our Enchiladas concluded up beingness more than of an Enchilada Lasagna. I besides used canned Enchilada sauce, it was still good. We saved the sour cream to add at the finish.
04/xiv/2009
These were tasty and rather simple to make
02/09/2004
This was a very proficient recipe. Get-go of all I thought 2 cans of chiles were too much used one-1/2 as they did not seem to add together any heat to the recipe. Instead of the tomato sauce, I used jar of Enchilada sauce and ane-cup of Salsa. Instead of Cheddar cheese I used Mexican cheese and 6" flour tortillas. I let one of my friends from United mexican states taste them and he thought they were good but stated Enchiladas should exist spicier and suggested calculation jalapena peppers.
06/12/2004
I took the advice of the other people - I used jalapenos instead of regular dark-green chiles - I mixed the beef with salsa and cheese and I covered the prepared enchiladas with enchilada sauce - very expert and leftovers were even better.
11/22/2006
I had high hopes but this 1 missed the mark. The beef mixture is tasty but when assembled ... not then good. Edible though. Won't endeavour once again.
05/24/2001
Served these at my Cinco De Mayo party and they were a hit! Gone in minutes! Substituted chicken instead and they were still great!
05/30/2001
This is a fast and delicious dish. I substituted ground beefiness for the steak with no problems at all. It was so succulent that my husband told our friends about it !!! This is definitely a "must try" recipe..You won't be disappointed.
11/27/2008
This recipe really did non turn out that well. Starting time of all information technology did not state to save whatever sauce or divide it. Second it broiled into a pile of mush. Adjacent fourth dimension I would cut the sauce in half and not mix any into the meat mixture.
eleven/12/2001
This is the best enchilada recipe I've fabricated, thanks Sara!
12/xx/2009
My daughter & I were looking for a quick dinner to whip up without besides much effort. We used left over roast beefiness, which we chopped up in the nutrient processor and left out the olives. After cooking the onion until translucent, We added the roast beef with the rest of the ingredients. Other than that nosotros made as is. The recipe was piece of cake, tasty and used up leftovers, what more could I ask for?
02/14/2010
WONDERFUL. Used the exact recipe.
07/24/2016
I fabricated information technology it was great volition fabricated once more
03/26/2009
I used ground beefiness and enchilada sauce. My husband loved information technology!
07/08/2003
Excellent recipe. We thoroughly enjoyed it. Volition definately make it again.
11/02/2009
Yummy! with a uppercase Y! Super easy. Made it exactly as written, except I heated up some oil in a pan and dipped the corn tortillas in it, to brand them pliable. My 2 boys and DH are going back for seconds as I type this. Cheers!
05/27/2016
very piece of cake recipe, and good too.
04/06/2003
I WASNT THRILLED WITH THIS RECIPE, But IVE SAID IN MY OTHER REVIEWS THAT ENCHILADAS ARE NOT MY Thing. MY HUBBY DIDNT Intendance FOR THIS ALL THAT MUCH EITHER Then IM Only GIVING It THREE STARS.
03/12/2007
This was very tasty. I ended upwards with too much tomato sauce. The mixture ended up being to soupy. I used flour tortillas. They were soggy. Information technology had groovy flavor. Succulent. I will probably arrive once again.
08/10/2008
While it was certainly edible, this only didn't turn out to be a hit. I can't put my finger on the problem, but I think it was the love apple sauce. It was bland and soupy. If I spent enough time thinking virtually it or reading the other reviews I could probably tweak this until it worked, simply I'd rather just hunt around for another enchilada recipe.
12/31/2016
Thank you for this recipe. It turned out great and I will make over again! I used ground beef, omitted the olives and added corn. I took the advice of others a used half tomato plant sauce/one-half red enchilada sauce. Anybody had seconds!
